Vegan Weaning - Blender Banana Pancakes
Banana Pancakes - suitable from 6 months.
There's no better way to start the day than with fresh pancakes. These are a doddle to whip up in the morning and are sure to keep your little one full up. Made only using banana, oats, flour and milk this is a really healthy recipe.
These mini pancakes are fab for taking on the go too. They keep well for a couple of days and can easily be put in a small tub or bag for toddler snacking emergencies.
When buying plant milk for your child make sure you are looking for fortified milk. It is an easy way of knowing that they aren't missing out on any essential nutrients. If you want to boost the nutrition in these pancakes further you can add a spoonful of ground flaxseed for a dose of omega 3.
I have used cup measurements here for ease and speed. I used a mug to weigh out my ingredients. It saves you faffing with scales in the morning!
Recipe
1 very ripe banana
1/2 cup Oats
1/2 cup Self Raising Flour
1/2 cup Fortified Non-dairy Milk
A little oil for frying
Method
Put all the ingredients in a blender and blend until you have a smooth batter
Heat a spoon of oil in a frying pan on a medium heat. To test if the pan is the right temperature drop a little batter in and see if it sizzles
When the pan is hot, spoon in small pancakes, I used a tablespoon for this.
The pancakes are ready to flip when the edges are set and there are bubbles on the top of the batter
Carefully flip and cook for another minute or so, until the underside of the pancake is golden brown
I love drizzling mine with a bit of agave syrup or peanut butter.
